Avocodo & Turmeric Tuna Cake

The journey to health is never more problematic than in the kitchen. There truly are not a lot of Autoimmune Protocol Diet recipes out there. So, I have been experimenting with my own. This is truly a delicious alternative for a yummy protein packed treat to pack in those Omega's we all need. Fresh tuna and avocado are the highlight of this dish. Under tones of garlic and turmeric help to fight inflammation and add a hint of spice and color. Serve with a green salad or if you are allowed make a yummy sandwich or melt. I really hope you enjoy this recipe as much as I enjoyed coming up with it.
Avocado & Turmeric Tuna Cake
Ingredients
3 Fresh Tuna Cakes or A Can of Tuna
1 Avocado
1/2 Tsp Black Pepper
2 Tbsp Garlic or 2 Cloves Minced
1/4 Diced Onion (optional)
1/4 Tsp Turmeric
1/2 Tsp Salt ( I do not eat much salt so you may like more)
1 Tbsp Parsley
2 Tbsp Coconut oil
1/4 Cup of Coconut flour or other flour such as tapioca or almond (Coconut and Tapioca are the Autoimmune Protocol Diet approved flours)
Directions

Step1: If using fresh tuna place steaks in your food processor and chop them. Add
half the avocado or mayo and blend
to the desired creaminess.

Step 2: Cube the other half of the avocado and add all dry ingredients. Mix in
and try not to mush the avacados.

Step 3: Roll into balls and then roll the balls into flour for a light coating.

Step 4: Heat oil in a cast iron skillet ( I have decided cast iron is truly the safest
cookware after doing much
research.

Step 5: Place the balls of tuna into the skillet
and cook until golden brown and
crisp. Drain on paper towels or
newspaper. Plate and serve hot.
